It’s always soup season to me! I’m a soup fiend year-round, no matter the weather. Soup is the perfect meal to me. Filling, comforting, warm and full of so many possibilities. Well, most of y’all know that potatoes are pretty much my favorite food. So, when you combine my favorite meal and my favorite food (potatoes), you get the perfect dish! Potato soups are the very definition of comfort. They are also incredibly filling, thanks to those wonderful, healthy carbs.
Since it has been rather cold here in Texas (shocker!), I can’t seem to get enough and when I realized how many soups I have on my blog with potatoes, I chuckled. I figured you all needed to get busy in your kitchens making every single one of these, if you haven’t yet. Best of all, all these vegan soup recipes are just a few ingredients and all are oil-free and gluten-free!

I am excited to try another soup recipe from your book tonight, the “Cajun Veggie and Potato Chowder.” I have a question though – I already went to the store, and I forgot to buy the dijon mustard!!! I do have regular mustard… Is there an easy substitution for that or can I just omit it? Thank you! Your recipes are so amazing, and I hate to sub because you are the flavor-combination master, but I’m hoping this is one that I can leave out or alter some regular mustard somehow.

Looks yummy!You list garlic in the ingredients list, but I donโt see where you add it to the recipe. I would guess that you add it to the partially sautรฉed onions?Thanks!

Hi Harold! I’m not sure which recipe you are referring to, but yes, most recipes you will add the garlic after the onions are mostly soft and cook for just about a minute.

Ha when I saw this title I have to admit I chuckled a little too ๐ I knew you had a lot of soups and a lot of potato recipes, but I never would’ve guessed 13! That is quite an impressive testament to both your creative versatility and potatoes delicious versatility. Whether as a chunky mix-in or as the creamy base, really and truly most all soups are better with potato I think. Although I’m partial to the really thick and creamy ones ๐ Plus they can turn soup from starter to full cozy filling meal so that’s a bonus. It’s been chilly here too, so this is the perfect time for a big list of coziness like this!!
