I promised to share several of my smoothie/breakfast concoctions…..so here’s another. Oh my. This one is sooo delicious. Sweet, tart, intense flavor and really thick! I had it for breakfast, but it would be great in the afternoon as well.
Dark cherries and fresh limes go so wonderfully together. This is almost like a dessert, but so much healthier.
Recipe: Serves 1
- 1 1/2 cups frozen dark cherries
- 3 tablespoons fresh lime juice
- zest of one lime
- 2 tablespoons cashew or almond butter
- 2-3 Medjool dates with the pits removed (or your preferred sweetener)
- 1 tablespoon ground flaxseed or chia seeds
- 1/2 cup water
- 1 cup crushed ice
Note: I highly recommend the dark cherries as they are very rich, juicy, plump and so sweet naturally, so you may like it without any sweetener. Try it first, then add any if you like. I can’t vouch for the taste of other cherries used in the recipe….if you try others, let me know how it turns out.
It’s important to use frozen cherries, so it is cold and slush-like. If you add too much ice, the flavor will be diluted. The frozen cherries blend very easily.
Add everything to your blender and pulse until thick, creamy and slushy! You can let your cherries sit for a couple of minutes to thaw first, if your blender isn’t very powerful. Enjoy! I know you will!
