Easy Vegan Stovetop Granola With Pecan Butter

You can make the easiest homemade vegan stovetop granola in just 20 minutes! You don’t need the oven or a bunch of time. It is easy, gluten-free and absolutely delicious!

EASY VEGAN STOVETOP GRANOLA

Who knew you could make granola on the stovetop and never turn your oven on?! It is ready in a fraction of the time and so easy and just as delicious!

This stovetop granola requires just 7 main ingredients and is vegan, gluten-free, and made with pecan butter and spices for a delicious, almost pecan pie flavor! I use pecan butter here or richness and flavor since we are not relying on oil or butter.

Since this is being cooked over the stovetop, you need a really runny nut butter so that it becomes crispy. Either pecan butter or walnut butter will work here.

STOVETOP GRANOLA RECIPE INGREDIENTS

  • Old-fashioned rolled oats
  • Pistachios or nuts of choice
  • Pecan butter or walnut butter
  • Maple syrup
  • Ground cinnamon
  • Ground ginger
  • Ground golden flaxseed

HOW TO MAKE STOVETOP GRANOLA

Step 1. Cook the oats for about 5 minutes until golden, stirring often to prevent burning.

Step 2. Then add the remaining ingredients and cook, stirring often, for 5-10 minutes until very golden brown.

Step 3. Line a sheet pan with parchment paper. Spread the cooked granola out and let it sit to cool and crisp up for 10 minutes, as it will be too soft still from the stovetop.

Step 4. Serve alone or with vegan yogurt and fruit of choice.

Ingredients

  • 1 1/4 cups (125g) old-fashioned rolled oats (use certified gluten-free if needed)
  • 1/4 cup pistachios or nuts/seeds of choice
  • 5 tablespoons (80g) pecan butter or walnut butter (SEE NOTES)
  • 1/4 cup (80g) pure maple syrup
  • 1 heaping tablespoon (8g) ground golden flaxseed
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon fine sea salt
  • I use this scale.

Instructions
 

  • Add the oats to a high quality nonstick pan and spray a little with nonstick spray if desired for more crisp. Cook over medium heat for about 5 minutes until golden, stirring often to prevent burning. They will seem to not brown at first, but then will quickly turn golden. They can burn quickly at this point, so watch closely or remove the pan from the heat while you add the remaining ingredients.
  • Add the remaining ingredients and cook, stirring often, for 5-10 minutes until very golden brown.
  • Line a sheet pan with parchment paper. Spread the cooked granola out and let it sit to cool and crisp up for 10 minutes, as it will be too soft still from the stovetop.
  • Eat as is, as cereal with milk or serve with yogurt and fruit of choice.

Notes

PECAN BUTTER:
I use pecan butter here for richness and flavor since we are not relying on oil or butter.
Since this is being cooked over the stovetop, you need a really runny nut butter so that it becomes crispy. Either pecan butter or walnut butter will work here.

    This is dangerously delicious and addictive! The pecan butter is so easy to make, and I love the rich flavor it gives the granola. So dang good!

          It should but just keep in mind that sunbutter is much thicker, less oily and also quite bitter, so it will make the granola less “buttery” and perhaps a tad more bitter.

    Felt like switching up my granola and decided to give this recipe a try. It was so easy to make and it turned out perfect. The cinnamon and ginger give it such a great flavor. I subbed walnuts for the pistachios since I was out, delicious. Going to have to make another batch since I ate half of it 😂
