HOMEMADE RAMEN SEASONING
While I have a traditional from-scratch homemade Vegan Ramen Noodle Soup already on the blog, sometimes you just want super fast, quick, simple and convenient, right? This recipe delivers on that!
Simply make the vegan ramen seasoning powder with several spices and add to vegetable broth and soy sauce, and in about 5 minutes, you have homemade ramen soup!
You must make this amazing smoked tofu to go along with it, too.

Homemade Vegan Ramen Seasoning
Ingredients
RAMEN SEASONING
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- 1 1/2 tablespoons onion flakes
- 1 tablespoon dried parsley
- 1 tablespoon dried green onions
- 1 tablespoon coconut sugar (use regular if you don't have this)
- 1 teaspoon ground ginger (use 1 1/2 teaspoons if you want it spicier)
- 1 teaspoon toasted sesame seeds
- 1 teaspoon chili powder
- 1 teaspoon paprika
- 2 teaspoons fine sea salt (I used Himalayan pink salt)
- 1/4 teaspoon ground black pepper (use 1/2 tsp for spicier)
HOW TO MAKE THE RAMEN SOUP
- 1 1/2 cups low-sodium vegetable broth
- 1 tablespoon of the above ramen seasoning
- 1 teaspoon low-sodium soy sauce
- 1 2 oz package ramen noodles (see NOTES at bottom)
- optional veggies: I added sweet red bell peppers, green onions, baby bok choy and smoked tofu. SO GOOD
Instructions
- Add all of the spices under "ramen seasoning" to a bowl and mix VERY well.
- To make the soup, bring the broth to a simmer over medium heat. Once simmering, add the 1 tablespoon of the ramen seasoning, 1 teaspoon soy sauce and the ramen noodles.
- Mix up the noodles with a fork and cook for about 4 minutes until tender.
- Add any toppings you like. I added sweet red bell peppers, green onions, baby bok choy and this smoked tofu. I roasted both my bell peppers and bok choy so it added a smoky flavor to the soup, but you don't have to do this.

I made this shortly after seeing it on Facebook with Lotus Foods brand brown rice and millet ramen for my gluten free teenage daughter. She absolutely loves it! Thanks for this awesome recipe!
I’m so happy to hear this Pam, thank you so much for making it so quickly!
I made this last night after I saw Brandiβs post on Instagram. Brandi is the Queen of Spices! This was easy & delicious! Thanks again Brandiπ
I cannot wait to try recipe—my daughter was just asking for ramen. One question: do you make your own smoked tofu or is there a brand you like? Thank you!
Hi Christina! I actually made it, it’s another new recipe coming this week! π
I can’t wait! I have everything to make the ramen, so I’ll wait a few more days to get your recipe for the tofu. Thanks!
Hi Brandi, just wondering about the soup seasoning, the unused seasoning will keep how long? In glass tight fitting lid, in fridge, with spices in pantry??? Please advise best storage Cathee
Hi Cathee! It will store for a few months sealed in a pantry!
Made the ramen seasoning around lunchtime & put in glass screw lid jar. Decided to make for my tea, just had to try. I followed recipe but only had 2 minute noodle so thatβs what I used. Added book Choy, red capsicum, & chives @ end. It was wonderful, really delicious, thankyou
I’m so happy to hear you loved it Cathee! Thank you so much for letting me know!
Do you buy dried green onions online? I have not seen them before.
No, I just bought them in the spice isle.
Can you show us a picture please? I cant fimd them anywhere locally. I found dried chives but they dont seem tl be the same
Hi Melissa! I can’t post pics in the comments, it won’t let me. Dried chives are basically the same, so you can use those. As long as they aren’t fresh, they are fine. They are also called freeze-dried which is sometimes in the produce area. Those work, too.
I used to make an asian style coleslaw using packaged ramen and can not wait to try it with these spices. How much so you think would be equal to one of those little packages?
Hi Susan! See the directions, it says to use 1 tablespoon to make the soup π
Delicious! I used millet & brown rice ramen, and added veggies (red bell pepper, carrots, and spinach) and baked tofu. Great that the seasoning recipe makes enough for a few meals – I stored the rest in a spice jar. Thanks for the recipe!
What a delicious soup! The seasoning works perfectly for the Ramen dish and I love that itβs homemade!! It went together really fast, a great busy weeknight meal thatβs fresh and healthy!!
Yay, I’m really glad you loved it Tara!
You are a genius! Period! This tastes exactly like my favorite cup ramen but the healthy version! Canβt thank you enough! ππππππ

Thank you so so much Nora!!
Is this a one-serving recipe?
No, it makes a lot, as you only use 1 tablespoon of the mixture, (see step 2). I believe it makes enough for 8 ramen soup bowls.
