Lemonade Milkshake

Well, between all the crazy Starbucks Unicorn mania all over social media, my large abundance of lemons and it getting really warm out here in Texas, I’ve really been in the mood for something cold, sweet and frosty. But, it’s not as exciting to look at as a Unicorn drink…sorrrry. But aside from that, I guarantee you will love this Vegan Lemonade Milkshake. It is so creamy, thick, bursting with lemon flavor and just sweet enough. It is absolutely delicious and feels like guilt, but without all that crazy amount of sugar.

Dare I say I enjoyed it more than even a chocolate milkshake?! Seriously, it has an almost cream cheese like flavor thanks to an unexpected ingredient…vanilla yogurt. The flavor of this milkshake just screams spring and is so unbelievably refreshing, I wanted to drink 2 back to back.

Did I mention it’s crazy easy to make and only 4 ingredients? Yup, you only need a few easy to find ingredients to make this:

  • Fresh lemons
  • Dairy-free “lite” coconut milk
  • Dairy-free vanilla yogurt
  • Maple syrup

You see that glass in the back half empty? Yup. That is because my daughter and I just couldn’t help ourselves and besides, it really is realistic to photograph it this way because it’s soooo good.

Even though you only need 4 ingredients for this, you will need 1 day in advance to make this, so plan today if you want it for tomorrow! You will need to freeze the freshly squeezed lemon juice and just HALF the can of “lite” coconut milk overnight so they become the ice for the milkshake. Otherwise it will be just too much liquid and not icy like a milkshake.

This is a much better option than just adding ice to the milkshake, because then the flavor gets really diluted and won’t taste like a milkshake! So, don’t try to get all impatient and skip that step!

Lemonade Milkshake

Make this AMAZING and crazy easy 4 Ingredient Lemonade Milkshake! It is so creamy and so light and refreshing and is totally dairy-free. Made with dairy-free vanilla yogurt, fresh lemon juice, maple syrup and lite coconut milk!

Yields 2 Milkshakes (Makes 3 cups)

Ingredients

  • One 13.5 oz can "lite" coconut milk you will ONLY be freezing half of the can
  • 1/2 cup 120g lemon juice
  • 2 tablespoons 30g vanilla dairy-free yogurt (I used Silk brand Soy because it has real vanilla beans in it and was so good)
  • 1/4 cup 80g pure maple syrup

Note: If you cannot find vanilla yogurt, add 1/4 teaspoon vanilla extract to the shake. Also, I find 1/4 cup syrup to be just enough to cut the acidity of the lemon juice and still keep it lightly sweet. Feel free to add more if a sweeter taste is desired. Remember, there is 1/2 cup of lemon juice, so the sweetness is needed.

    Note 2: The reason for "lite coconut milk" is because it is creamy and has some fat in it and does NOT leave a coconut taste like full fat coconut milk. Other milks will be too thin and make it less creamy like a milkshake and affect the flavor.

      Instructions
       

      • Add just half of the can of coconut milk and the lemon juice to ice cube trays and freeze until solid or overnight.
      • Add the ice cubes, remaining half can of the coconut milk, yogurt and maple syrup and blend just until frothy, being careful not to overprocess it into a complete liquid. It should be frothy and icy like a traditional milkshake. Taste and add anymore sweetener if a sweeter taste is desired. If you want it icier, add a bit of ice, being careful not to add too much to dilute the flavor.

        This looks so heavenly Brandi! I’ve never really thought about creamy + lemonade before but suddenly it makes complete sense to me. As someone who also finds that coconut milk can be a little overpowering, I appreciate your note about using the lite version. Do you think that homemade cashew milk might also work?

          You are so sweet Shannon, thank you! Yes, I think homemade cashew milk would work great! Homemade is always much more creamy than storebought, so I think it would be comparable to the coconut milk. You would need 1 3/4 cups so hopefully the cashew flavor won’t be too strong, but I’m sure it’s easily adjustable 🙂

        Okay this is a zillion times more enticing of a milkshake flavor than unicorn to me too, and did you say maybe even better than chocolate??? WHOA I’m going to need a second to process that one! Lol sometimes citrusy does just hit the spot even better than decadent dark chocolate though, and I love the chunky icy-meets-creamy texture. It reminds me a lot of a frappuccino texture ironically, but with the coconut milk ice cubes you don’t have to gulp it down in 2 seconds before it’s just a sad watery mess. So smart to freeze the lemon juice too for extra thickness. I’m laughing over here at our synchronicity though because I literally just shot a frozen lemonade recipe yesterday ha! No yogurt though and an extra fruity addition. Off to watch the video now so I can even more intensely crave this + a day outside in the sun 🙂

        Your beautiful video once again enticed me to make this now! I had frozen coconut milk already and made this for a snack before my hot yoga class. I used Kite Hill almond yogurt and added a tablespoon of vanilla. I don’t like sweet drinks so I used just a drizzle of the syrup on the top of the finished product. It was lightly tart, refreshing and tropical!

        This sounds amazingly yummy! I think it’d also be delish made with orange juice in place of the lemon juice.

        I LOVE lemons so this is totally exciting for me to look at 😉 Don’t get me wrong, I think this whole unicorn everything trend is pretty to look at, but it’s just not practical for me – I don’t have the time to color and assemble everything when it’s going to be devoured in a matter of seconds! Haha! But back to this creamy, refreshing treat! I love that you used coconut milk and milk/lemon ice cubes – I started drooling while watching you pour this…that consistency is a milkshake perfection! Creamy, icy, and delicious!         Brandi, this just screams Spring!!!
        I have never tried lemon flavoured milkshake, but this recipe looks so easy and I just love the idea of freezing the lemon juice and using it rather than ice cubes!!! So many possibilities!!!

        Ooooh, I think this sounds way yummier than the Unicorn frapp, and I LOVE unicorn and rainbow stuff. But I’m also a sucker for lemons :). I’ve never thought to make a lemony milkshake, but now I know that I need to!

        OMG I need to make this pronto! I am a lemon fanatic and the fact that it is creamy from the coconut milk just sounds too good to be true. My 9 year old son loves lemon too, more than chocolate. He would LOVE this. I’m not quite there, but yes, I’ll make this as soon as I stock up on coconut milk!

        This is awesome! I’ve been a vegan for several years, but still fondly recall real milkshakes made with real ingredients. I also don’t like desserts that are really sweet, and this is a wonderful evening treat that’s so refreshing with just the right amount of sweetness. I couldn’t find organic lemons in grocery stores near where I live, so used bottled organic lemon juice, and it still tasted great. It will no doubt taste even better when I can use freshly squeezed organic lemon juice. Great recipe, Brandi!

        I finally got around to making this. All I have to say is that I wish I hadn’t procrastinated. It’s so good! I like shakes a little thicker so think I may try freezing more than half the coconut milk next time, but the taste is off the charts!

          It will have less of a creamy tangy flavor but you could just use full-fat coconut milk or leave it out I guess!
