This smoothie is not only amazingly delicious, but it is loaded with some major antioxidant goodness. I’ve been drinking one every morning for over a week now. I actually can’t wait until morning everyday, just so I can drink one. I absolutely love smoothies and more importantly, love how they make me feel.

My daughter absolutely loves them too. When prepping it each morning, she says “smoomoo”!!

This smoothie is incredibly high in Vitamins A, C and E just to name a few. There is actually so many benefits, it would take forever to name them all. I recommend a whole orange over just orange juice because the majority of the benefits and nutrients come from the pulp of the orange.

Parsley is high in vitamin A, C and incredibly high in vitamin K….153% of our daily RDA, in fact! It is also high in luteolin, which acts as an anti-inflammatory agent in the body. Ginger also acts as an anti-inflammatory agent, as well as promoting absorption of other nutrients into the body. Blueberries are an antioxidant powerhouse, being one of the highest antioxidant fruits out of all fruit.

So, basically, drink this smoothie everyday and boost your immune system!!

Prep Time 5 mins
Yields 1 smoothie

Ingredients

  • 1 1/2 cups frozen strawberries
  • 1/2 cup frozen wild blueberries
  • 1 whole orange, peeled and seeded
  • 1 small handful parsley (you cannot taste the parsley at all in this smoothie, so you can adjust more or less)
  • 1 teaspoon fresh ginger
  • 1 cup (240g) orange juice
  • 1 cup (240g) coconut water or plain water

Instructions

  • Add all ingredients into your blender and blend until smooth. If you do not have a high-powered blender, let the strawberries thaw for 15-20 minutes first, otherwise it is hard to blend and you don't want to add too much water to dilute the flavor.

Notes

Gluten-free, oil-free, nut-free

Definitely making this too Brandi. Sounds delicious, and I have everything on the list! My boys love smoothies too. Love that your daughter calls them smoomoos. My eldest used to refer to them as moomies when he was little.

Thank you Charisse! Oh, I can assure you this is tasty and delicious and doesn’t taste like some nasty “healthy” green monster. I’m very picky…I can’t eat or drink something UNLESS it tastes good! I hope you like it…let me know 🙂

Went to the store today and got everything for this, making it tomorrow morning, it sounds great, I love parsley and think that even if you can taste it it would add a freshness and herbal quality to the smoothie, Can’t wait to make it.

Oh awesome!! Please let me know tomorrow after you make it how it turned out!! I’m actually about to make another one right now as “dessert”! 🙂 Yeah, you can’t taste the parsley at all…I one time put way too much and didn’t like it too much, but it definitely is personal preference. The blueberries do an exceptional job of camouflaging it!

DELICIOUS way to start the day!! I love the addition of ginger, YUM! I DO have a high powered blender, I need to start putting it to use for smoothies. I have been making a lot of sauces with it lately!

Thank you! Just use filtered water. I wouldn’t use milk because that would alter the taste too much and most commercial almond milk has preservatives and I was trying to keep this as healthy as possible. Please enjoy it and let me know how you like it. 🙂

This sounds amazing!!! Great minds think alike–I’ve been drinking green smoothies every day for the past week–all some variation of spinach, almond milk, chia seeds, cacao powder, frozen berries or bananas and maybe peanut butter. Ha, just remembered you don’t like bananas–this is a great non-banana smoothie! Reminds me of one during the Whole Living detox–2 oranges + 1 cup of berries. I loved the sherbert-like texture! I would love to give this a try! (And ps: your daughter sounds ADORABLE!)

Thanks so much Erika!! I love the texture too…I like my smoothies using frozen fruit instead of ice…stringer flavor and love the smooth icy texture..soooo delicious! I’m addicted to them! Yeah, I really wish I liked bananas…only time I could handle them was after running my half marathon..I would eat anything then! My hubby and daughter both love them 🙂

I can see why you got such a positive response to this smoothie post! It looks fantastic! My biggest hit day ever was on the day of the VVP. Yeah, pretty hard to top myself with that recipe 😉

Would you believe I haven’t put parsley in a smoothie yet…. I think it’s time! xx

Aww thanks Somer! I honestly was shocked and did a double take….who knew so many people would react like that to a healthy smoothie? Haha! My second biggest hits day are my 4 ingredient peanut butter cookies…those have been really popular for the easy factor! I can see why your VVP was your biggest hit day…you posted that amazing cheese! Yeah…parsley is very strong so go easy on how much you add…I overdid it the first time…yuck! 🙂
