VEGAN SWEET POTATO LENTIL SOUP
I just love soups with a little kick, but to really balance and turn up the flavor, I like a little sweetness! That is the reasoning behind this soup I created. It has become quite a staple in my family and is a favorite among friends. It has a deep warm and smoky flavor that is balanced out with the sweetness of sweet potatoes. It’s earthy and the epitome of comfort food. It couldn’t beΒ any simpler either, just throw everything into a pot and let it cook! Creating potato soups are some of my favorite meals.

I have found many lentil soups to be a little bland, but this one with all of the smoky spices I’ve added give such a depth of flavor that is honestly addictive. The sweet potatoes really compliment the smoky flavor as well. A vegan, gluten-free, oil-free lentil soup that is totally low-fat and guilt-free? Yes, please!

Vegan Sweet Potato Lentil Soup (Oil-free!)
Ingredients
- 1 lb bag of dry green lentils
- 1 1/2 cups (240g) finely diced red onion
- 4 large garlic cloves or 1 tablespoon garlic powder
- 3 medium sweet potatoes, peeled & chopped into bite size 1 inch chunks
- 4 tablespoons (60g) tomato paste
- 2-3 teaspoons chili powder
- 1 tablespoon cumin
- 1 tablespoon smoked paprika
- 1 tablespoon sea salt (this makes a LARGE pot, so don't be alarmed)
- 1 teaspoon black pepper
- splash of lemon juice and zest at the end
Instructions
- This is an extremely easy dump-it-all-at-once type of recipe, but it still turns out incredibly flavorful. Make sure to have everything chopped and ready to go before beginning.
- Rinse lentils well and add them to a large pot with 8 cups of water or low-sodium veggie broth. Bring to a low boil.
- As soon as it begins to boil, add all of the ingredients, except the lemon. (The onion, garlic, sweet potatoes, tomato paste, chili powder, cumin, smoked paprika, salt & pepper).
- Give it a good stir and turn down the heat to low, put on a lid with it slightly tilted to let some of the steam escape. Simmer for 20-30 minutes or until the lentils and potatoes are tender, but not mushy, stirring a few times during the cooking process. If you cook it too fast, the lentils will not become tender.
- Add any more salt to taste and garnish with a splash of lemon juice and lemon zest before serving.

I really liked this recipe. I did adjust the spices to my liking because Iβm not a huge fan of smoked anything so I just cut the paprika & cumin in half. Iβm always looking for new plant based recipes that donβt oil so I decided to try this & glad I did. Will add it to my rotation!

This soup is DELICIOUS! I made it for lunch today in my Instant Pot and it was incredible! I adjusted the water to 7 cups, and cooked it on HIGH pressure for 17 minutes, with a 15 minute NPR. Oh really? Honestly, smoked paprika I’ve seen at every grocery store. It’s in the spice isle. I imagine even Walmart would carry it. Do you have a Krogers? If so, they are usually very helpful at helping you find things. You may just be passing over it since there are so many spices in stores, but you should definitely be able to find it. It’s near all the spices like cumin, chili powder, etc.

I can’t get smoked paprika where I live (South America) but I can get smoked salt. So I use regular paprika and sub smoked salt for some of the sea salt (liquid smoke works, too). It turns out great!

This is excellent and the easiest dish I have made on my new whole foods plant based diet. I’m a 74-year old heart failure patient feeling very well right now. But this is such an easy recipe to prepare that I will am happy to have it in case my health and abilities deteriorate in the future.
I am also sending the recipe and all the ingredients home with a visitor who is much younger but who has some serious health problems and I’m trying to encourage him into better eating habits and he’ll have no excuse if I prepare a everything for him to make in the easy short time that this recipe takes.

Hi Jutta! I have not tried canned lentils so I’m really not sure. The liquid that is added is to cook the lentils in, so you wouldn’t need all that liquid. YOu can try canned lentils and add the spices and some extra broth if needed to make it more of a soup consistency. Those are my guesses!

This looks yummy. I wonder if it could be made in The Instant Pot. I might try it. However, it would kind of need to be done in the reverse order from what you have listed. The potatoes take longer to cook, so they would go in first for about 8 minutes. The onion, lentils etc. would probably only need about 3 minutes. Do you ever give recipes for pressure cookers?

Hi! I don’t own an instant pot, so I am unsure of the way it would need to be cooked. This one is super easy as you just throw everything in at the same time and in about 30 minutes, it’s ready and perfect. If you do it in the instant pot, let me know how it turns out, sorry, I just don’t know since I don’t have one!

This soup is a homerun! It is super simple to make, and just bursts with flavor. It is a very hearty soup with a nice little kick to it. It’s great for summer or fall amd makes enough for generous sevings for two days. Knowing it’s so good for you is just an added bonus.
