The day has come…I’m releasing my very first ECookbook todayyyyyyyy! Can you hear me shouting?? Hahaha, that is how excited I am. Oh boy, this has been a labor of love, long hours and so much passion put into this for you all. I’ve been testing these recipes like a mad person, nonstop, in my kitchen. My kitchen basically has looked like a horrible train wreck. But, but, but…today makes it all worth it. I got the idea to create a holiday Christmas dessert ECookbook because you all know how insanely obsessed I am with created desserts. I honestly have so many recipes and ideas on my notepads, that I could never possibly post them all. So, with the holidays here, and tummies all around that love desserts, off to the kitchen I ran to create this book for you all. Dessert creations like this…..
CINNAMON ROLL COOKIES. These literally taste like a cinnamon roll, but in cookie form. They are very soft, moist, light, sweet, cinnamon-y, buttery and my husband said they are his new favorite cookie. I’m warning you, these are not for the faint of heart! As noted in the Ebook, make sure you are using a CREAMY milk, I used “lite” canned coconut milk, shaken well first. This will have an effect of the thickness and color. I would not recommend almond, oat or rice milks, etc.
All recipes are Vegan, Gluten-free and Oil-free! Now, they are not nut-free. However, 5 of the 8 recipes are either nut-free or can be made nut-free by using sunbutter. This will work well for most of them, but if you hate the taste of sunbutter, it may not be a good idea.

This dessert cookbook is 16 pages and has a wonderful, true cookbook layout. It has the pictures on the left side of the page and the recipes on the right, as opposed to scrolling through long slides, it’s easier to read this way! The book focuses on delicious recipes that absolutely anybody will love. All recipes are just 8 ingredients (not including salt & water), are vegan, dairy-free, gluten-free and oil-free! These are not desserts that are “ok for being vegan or gluten-free”, nor do they “taste healthy”. They taste rich, sinful and are absolute crowd-pleasing desserts. They are all cookies and bars, with a bonus Double Chocolate Peppermint Muffin recipe thrown in there. I included this muffin recipe because they are my favorite muffins I’ve ever had!
All recipes are Vegan, Gluten-Free and Oil-Free. Some recipes do contain nuts and/or seeds.
It’s no secret that I’m very passionate about creating desserts. I practically write them in my sleep. It’s where I find my greatest joy in food. Baking, especially. Since I write so many, I thought it would be great idea to come up with a special Christmas/Holiday Dessert themed ECookbook for all of you to enjoy! So many of you have requested an Ebook from me and well, this special themed one is my first Ebook that I’m super excited about! It’s perfect for the holidays, or honestly, anytime of the year that you want to make some delicious and EASY desserts!
You can truly make amazingly, delicious desserts without using ANY oil, yet they taste just as rich. I only use nuts and seeds (whole foods) for the fat, in place of oil. There is a little bit of nonstick spray used for just 1 recipe, but no oil listed as an actual ingredient in the ingredient lists. The recipes couldn’t be any easier. Several of them would be great gifts, too, especially the Christmas Bark!
So, here are the recipes with details relating to each of them. FYI, salt or water is not included as part of the count of ingredients, just the way my blog is.

No-Bake Chocolate Peppermint Bars. Vegan, gluten-free, oil-free. 8 ingredients.
Gingerbread Rice Crispy Treats….no lie, these are my favorite out of all the desserts! These taste just like those spicy gingerbread cookies, but in crispy treat form. They are a sure crowd-pleaser! Vegan, gluten-free, oil-free. 8 ingredients.
Double Chocolate Peppermint Oat Muffins…these are seriously the most delicious muffins I think I’ve ever had or made. One word. Incredible. For serious chocolate lovers. Vegan, gluten-free, oil-free, nut-free. 8 ingredients.
Double Chocolate Fudge Crinkle Cookies. Vegan, gluten-free, oil-free. 8 ingredients. These got everybody so excited when I shared teaser photos on IG and Facebook and you were all asking about these cookies that were on the plate next to my Best Vegan Hot Chocolate post. Well, now you can finally get your hands on the recipe! These taste just like the rich, sweet, moist, fudgy traditional ones, but without the eggs, butter, oil or white flour! They are also nut-free and coconut-free! Magical I tell ya, lol! Hmmm, are you wondering what fairy dust I used to make these????
Took me many trials, but when you are going for that classic taste and texture, I won’t settle for less. Add in oil-free, gluten-free and egg-free and well, it becomes more challenging. If you aren’t aware, traditional chocolate crinkle cookie batter is kind of a pain in the you-know-what to work with. It has to be chilled and then you need to work quickly before it softens too much. This process gives it the wonderful, classic crinkled effect and texture. While the dough is annoying, it’s still easy to make and SO DELICIOUS.
Peanut Butter Chai Cookies. Vegan, gluten-free, oil-free. Can be made nut-free by using sunbutter, that is, if you don’t mind the taste of sunbutter. I double dare you to not eat all the batter before even baking these! It is to die for!
Dark Chocolate Pecan Christmas Bark. Vegan, gluten-free, oil-free. Can be made nut-free by just leaving out the pecans. Makes a great gift!
Apple Crisp Bars with Gingerbread Crust. Vegan, gluten-free, oil-free. These are sooooo unbelievably, delicious!

As soon as you announced this e-cookbook I had to jump and buy it because I’m such a big fan of your recipes. So far from this e-cookbook I’ve done 3 recipes which are the cinnamon roll cookies, the dark chocolate pecan Christmas bark, and the double chocolate fudge crinkle cookies. Every time I make one of these recipes I always think that that’s going to be my favorite one but then I start making other ones and I say that one is my favorite as well. How the heck did you get your icing so white and thick on your Cinnamon Roll Cookies? I followed your instructions to the letter and my icing is not bright white. I used pretty thick almond milk, only 1 tsp, and the icing is sort of opaque and almost soaking into the cookies. 🙁 Cookies taste amazing, though.
Hi Shelly, super easy fix! I used “light” canned coconut milk which is very creamy and bright white. I never used storebought almond milk because I find it does not produce creamy results in things. It’s really mostly water. However, the amount of thickness is SO easy to fix, if it’s too runny or opaque, that simply just means your sugar to liquid ratio is off and you just simply add more sugar to thicken and brighten it back up. Super easy! Powdered sugar very easily gets thin with just the tiniest amount of liquid, so the less creamy of a milk you use, the more sugar you would need to add. It’s also why I recommend the creamier the better of a milk. Just add more sugar and it will get thicker. Hope that helps 🙂
Oh, and I’m so glad the cookies tasted amazing!! You could also add a tiny amount of cashew butter and that will easily thicken it up as well, to make up for the almond milk!

Love all the recipes and I just purchased the ebook. I’ve always loved the chocolate crinkle cookies, especially the cinnamon. I see your recipe didn’t include that, but I’m going to do 1/2 a batch without it and 1/2 with some cinnamon added in. Or maybe the recipe I used to follow, which I received from a friends grandmother she improvised and added it in. Anyway, everything looks great in the book and I can’t wait to start baking.

Soooo, drum roll, here are the first recipes I made from Brandi’s ebook. Chocolate peppermint bars and double chocolate peppermint muffins. These are incredible. When we tasted the muffins James and I both looked at each other with disbelief. How in the world are these simple 8 ingredient muffins THIS FREAKING GOOD?? And how does Brandi not have a bakery?? Hi Bonnie, so sorry for the late reply! 5 of the recipes contain oats…some could possibly be subbed with white all-purpose flour (the ones that use oat flour) but the amount would have to be reduced since it’s much more finely ground than oat flour and I haven’t tested that. For the bars that use oats, you could try quinoa flakes instead. That is a guess, but I think it would work. Let me know if you have any other questions 🙂
