VEGAN APPLE CRISP IN A MUG
I have the perfect Fall dessert for you with this delicious healthy vegan apple crisp in a mug! Perfectly sweetened, spiced with my homemade apple pie spice and is also made without any butter and is oil-free and gluten-free.
It was so good, my daughter and I both absolutely loved it!
And since it’s made with oats and apples and minimal added sugar, it’s a healthy dessert!
HOW TO MAKE VEGAN APPLE CRISP IN A MUG
First, make the homemade apple pie spice.
Make the filling.
Make the topping.
Microwave for 2 1/2 minutes.
Top with vegan vanilla ice cream if desired! I was feeling extra fancy so I added some. YUM.

Vegan Apple Crisp In A Mug
Ingredients
FILLING
- 1 cup (115g) peeled and diced honey crisp apple 1/4 inch pieces (about 1 regular size apple)
- 2 teaspoons (10g) coconut sugar
- 1/2 teaspoon apple pie spice
- 2 teaspoons oat flour or regular flour if not gluten-free
TOPPING
- 3 tablespoons (24g) regular rolled oats (not instant)
- 1 tablespoon (20g) pure maple syrup
- 1/2 teaspoon apple pie spice
- 1 tablespoon (16g) runny tahini or nut butter of choice
- pinch fine salt
Instructions
- Make sure the apple is diced no bigger than 1/4 inch pieces or they won't fully cook. Mix the "filling" ingredients in a small bowl, making sure the spices and sugar are evenly coated over the apples.
- I used tahini because I loved the bitterness against the sweetness but if you don't like the bitterness of tahini, use a runny almond butter. My tahini is very runny so the topping was very moist, as seen in the photo. If yours isn't wet and sticky, add a tad more syrup.
- Mix the "topping" ingredients in a separate bowl until sticky and wet.
- In a mug, add the apple filling.
- Add the topping on top of the apples.
- Microwave 2 1/2 minutes. Microwaves can vary so yours may need up to 3 minutes for the apples to be cooked. Mine was perfect at 2 1/2 minutes. Tender but not mushy.
- It will be super hot, so let it cool a few minutes before eating. Top with ice cream and enjoy!

All the yesses to this dessert! I love that it’s not overwhelmingly sweet, just a single serving, and that it’s mostly fruit! I think it’s healthy enough that I could eat this for breakfast if I really wanted to (I do!). The only change I made was to use almond butter for the tahini in the topping. I topped it all off with some homemade vegan cinnamon ice cream that I had stashed in the freezer. Great recipe!

You couldn’t be more wrong, I don’t know if you’re judging my entire site off of a dessert, but I have hundreds of recipes, and very specifically high protein. I actually focus on many high protein recipes. But you need to look at more than just a dessert. And carbs are not the enemy, quality carbs and nutrient dense is what you should focus on.

You can try baking it at 350F for 15-20 minutes. I have not tested this personally, so it’s just a guess.

This is SO good! Your recipes never let me down. I always use a scale for measuring and appreciate so much that you cook in grams. For this recipe, I did sub date syrup for the maple syrup and a tablespoon of homemade date paste for the coconut sugar, and it was still incredible. I agree the tahini is key for that flavor kick. It’s been a LOOOOONG time since I left a comment on your site (remember me???….your MOST “long-winded” fan of all time?!!) because A LOT has been happening in my life over the past 2+ years. However, this recipe of yours just looked SOOOOO GOOOD (well, so what ELSE is new??!! haha), and I was SOOOO HUNGRY for something “appley” and “Fallish” like your recipe, so I decided to prepare it, and HOLY CANOLI babycakes! I KNEW I wouldn’t be disappointed, and I ABSOLUTELY WAS NOT!!! Even though I had a brand new container of Apple Pie Spice in the cupboard, I wanted to try YOUR version, so I made it first & used it in the recipe. And let me tell ya (you KNOW I’m GONNA!!..haha!), it was UTTERLY PERFECT TOO, just like this spectacular “Apple Crisp In A Mug”!!! (And I’m gonna start using YOUR apple pie spice blend in my overnight oats breakfast, cuz I ADORE that PERFECT balance of the spices you came up with….It’s MUCH better than the McCormick store-bought junk!!! YUCK!!!) Brandi, you KNOW I don’t lie, EVEN in my “extreme verbosity”, so believe me when I say that EVERYTHING about this dessert is outstandingly luscious! (And it’s so fast & easy to boot!) I’m new to cooking Vegan – just started in August. I’m still learning how to make the transition, but doing fairly well. I would like to stay away from sugar as much as possible. I’ve only used recipes that have maple syrup as the sweetener. I’ve Googled Vegan sugars, but it all seems a bit confusing – so many options, but which ones are really the best ones? What would you recommend? Thank you!

Hi Kathy! I use maple syrup for probably 90% of my recipes since it’s one of the most natural sweeteners. I also will use agave sometimes. The healthiest sweetener would be dates. Only thing is because of the texture they don’t work great in all recipes. I also like coconut sugar as it tastes like caramel and is a bit healthier and less processed than white sugar. However, sugar is sugar and too much is never a good idea. I don’t eat sweets daily but I do eat fruit daily and that helps a ton with curbing my craving for sweets. I like this dessert because it’s small, one serving and mainly fruit and oats with not as much processed sugar as a traditional dessert.
