Servings: 6popsicles
Ingredients
1/2cupunsweetened apple juice
1cupfull-fat canned coconut milk
2teaspoonspure maple syrupadd more if you want them really sweet
1/2teaspoonvanilla
2kiwischopped into 1/4 inch pieces
4-6strawberrieschopped into 1/4 inch pieces
Note
These are nice and light popsicles with a milld creamy texture from the coconut milk. For a richer popsicleuse full fat coconut milk. For a really light popsicle, use all apple juice. These make about 6 rocket-style popsicles, so double or triple for a large gathering or party.
Instructions
Shake the can of coconut milk really well first and add to a bowl with the apple juice, syrup and vanilla. Whisk to combine well.
Chop the fruit.
Stack up the fruit into popsicle molds, alternating between the kiwi and strawberries. Depending on the size of your popsicle molds, it may vary how many you get. I got 6 popsicles with the style I used.
Pour the prepared apple milk over the fruit, leaving 1/2 inch gap at the top to prevent overflowing. Put the lids on and place to freeze for several hours in the freezer. When ready to eat, take them out just a few minutes before so they can loosen a little to pull them from the base.
