This Vegan Barbecue Chicken Pizza is a showstopper for pizza lovers! The flavors are incredible, the ingredients are homemade, including homemade mozzarella and it's so easy to make!
vegan chicken (I used Daring brand) thawed and chopped into bite size pieces
Instructions
If using my homemade flatbread, vegan mozzarella cheese, pizza sauce and barbecue sauce, then go ahead and make those so they are on hand for anytime you want to make these quick pizzas.
Keep in mind, I did not measure any of the topping ingredients, I just eyeballed everything, as I think it's pretty self-explanatory, visually, how much you want to add on your pizza.
Set the chicken out for a few minutes to thaw and soften some and then cut them into smaller bite size pieces for the pizza. NOTE: If you don't want to use vegan chicken, I totally understand, a great sub would be my smoky tofu! I've also made that on pizza and it's so delicious!
To assemble, spread some pizza sauce onto the cooked flatbread.
Layer a large handful of spinach on the sauce, followed by the chopped bell pepper, and chopped chicken pieces.
Drizzle the mozzarella over the top of the ingredients, using as much as desired. To make it more easy to drizzle, if needed/desired, add a touch more broth to the cheese when making and use it right away after blending.As you can see in the photo, I made mine more runny so it was easier to drizzle. But you can totally just dollop if on if preferred.
Lastly, sprinkle some Italian seasoning all over the top.
Bake at 400°F (204°C) for 8-10 minutes until crispy and the cheese is looking firm.
After it comes out of the oven, drizzle bbq sauce all over.
