Meet your protein goals with this delicious No Bake Vegan Protein Cookie Dough Bark! It is lightly sweetened, easy to make in just minutes and is also gluten-free! You only need 6 main ingredients.
Use a scale for accurate results following my grand weights. You don’t need to use cups.

If you use another brand, make sure it is sweetened and one you love the flavor because it will be reflected in the cookie dough.
Instructions
Add all of the dry ingredients and whisk very well. Poor in the liquids and only 1/2 cup chocolate chips and stir until it’s a very thick stiff dough.
Put a piece of parchment pap.er on a sheet pan. Add the cookie dough and spread it out into a large shape.
Use another piece of parchment paper to place on top and flatten and smooth out the cookie dough until it’s 1/ 4th inch thick. Make sure it’s even and flat.
Place in the freezer for 1 hour. Melt the remaining chocolate chips and spread over the top of the cookie dough in place back in the freezer until set. Then slice into desired pieces. Store in the freezer.
