Meet your protein goals with this delicious No Bake Vegan Protein Cookie Dough Bark! It is lightly sweetened, easy to make in just minutes and is also gluten-free! You only need 6 main ingredients. Almond flour, oat flour, vegan protein powder, coconut sugar, maple syrup, orange juice, vegan chocolate chips and salt!

Make sure to use a quality super fine blanched almond flour for the best results. I really love this brand.

It is super easy to make and a delicious treat with an extra boost of protein.

For this recipe you need a quality vegan protein powder, because it will be reflected in the end taste. This is important to choose a flavor you love. My absolute favorite vegan protein powder is Sprout Living. Clean ingredients and mixes very well.

HOW TO MAKE VEGAN PROTEIN COOKIE DOUGH BARK

Simply mix the ingredients.

Melt the chocolate chips and spread out onto the flattened cookie dough. Place in the freezer to set. After chilled and firm, slice into desired sizes. Keep stored in the freezer, as it will soften too much in the fridge.

Ingredients

  • 1/2 cup (64g) superfine oat flour
  • 1 cup (112g) superfine blanched almond flour
  • 2 scoops (36g) vegan vanilla protein powder, I use SPROUT LIVING "vanilla lucuma" use my code "thevegan8" to save 20% off all products
  • 2 tablespoons coconut sugar (optional for sweeter version)
  • 1/2 teaspoon fine sea salt
  • 1/4 cup (80g) pure maple syrup
  • 1/4 cup (60g) freshly squeezed orange juice (do not use bottled, it will make the dough bitter and not sweet enough or taste right!
  • 1 1/4 cups dairy-free semi-sweet chocolate chips, separated
  • I use this scale.

NOTE

  • Use a scale for accurate results following my grand weights. You don’t need to use cups. 
  • I use sprout living protein powder “Vanilla Lucuma” because the quality is excellent and the taste is fabulous. You can save 20% off if you order from them using my code “thevegan8”. If you use another brand, make sure it is sweetened and one you love the flavor because it will be reflected in the cookie dough.

Instructions
 

  • Add all of the dry ingredients and whisk very well. Poor in the liquids and only 1/2 cup chocolate chips and stir until it’s a very thick stiff dough.
  • Put a piece of parchment pap.er on a sheet pan. Add the cookie dough and spread it out into a large shape.
  • Use another piece of parchment paper to place on top and flatten and smooth out the cookie dough until it’s 1/ 4th inch thick. Make sure it’s even and flat.
  • Place in the freezer for 1 hour. Melt the remaining chocolate chips and spread over the top of the cookie dough in place back in the freezer until set. Then slice into desired pieces. Store in the freezer.

    Brandi did it again..this is a really delicious treat and so easy to make. Had it for breakfast all week. I also crumbled it and put it on some vanilla ice cream for chocolate chip cookie dough ice cream!

      This is such a yummy treat! I usually eat something small before a workout, so I cut the bark into pretty small pieces to have as my pre-workout snack. It tastes like you’re eating cookie dough!

    This vegan protein cookie dough bark is so good and quick and easy to make! My husband and I both enjoy it. The subtle orange flavor brings a different taste dimension to the bark! This is a recipe I’ll be making again and again!
