VEGAN MONSTER COOKIES
If you’ve never head of the classic monster cookies, they are a traditional cookie that is chewy from oats and made typically with peanut butter. I used almond butter. They are also made with chocolate chips, and M&M’s or other candies.
These vegan monster cookies are packed full of wholesome ingredients and are gluten-free. plant-based and oil-free. My version contains oats, almond flour, vegan m&m’s, chocolate chips, almond butter and are so delicious and satisfying and easy to make.
For the vegan m&m’s, I used the vegan brand Unreal. They have several vegan candies and are so, so yummy. You can get them here and also at some stores. I bought mine at Heb in Texas.
HOW TO MAKE VEGAN MONSTER COOKIES
Mix up all the ingredients into a large bowl.
Roll about 2 tablespoons worth of cookie dough into balls and space out onto a lined cookie sheet. Press each cookie flat about 1/4 inch thick. Bake 10-15 minutes until golden brown along the edges.
Enjoy and try not to eat too many at once.

Vegan Monster Cookies
Ingredients
- 1 cup (112g) superfine blanched almond flour
- 1 cup (100g) rolled oats, not instant (use gluten-free if needed)
- 1/2 teaspoon baking powder
- 2 tablespoons coconut sugar or brown sugar
- 1/4 teaspoon fine sea salt
- 1/2 cup + 2 tablespoons (160g) roasted super creamy almond butter (make sure it is salt-free)
- 6 tablespoons (120g) pure maple syrup (agave would work too
- 3 tablespoons (45g) plant-based milk
- 1 1/2 teaspoons vanilla extract
- 1/2 cup (120g) dairy-free semi-sweet chocolate chips
- 1/2 cup vegan m&m's (I use the Unreal brand here)
NOTE
- Always use a scale for accuracy when baking, following MY gram weights listed. You never need cups, just the scale and bowl and make sure to zero out in between each ingredient.
- I use this scale.
Instructions
- Preheat the oven to 350°F (177°C) and line 2 sheet pans with parchment paper.
- To a large bowl, add the almond flour, oats, baking powder, sugar and salt and whisk well.
- To the same bowl, add the almond butter, syrup, vanilla, milk, chocolate chips and vegan m&m's. Mix all of the ingredients until a very thick and sticky, cohesive batter forms.
- Using about 2 tablespoons worth of dough, form smooth round balls with your hands. The batter should be sticky but you should be able to roll into balls. Place them on the pan 2 inches apart. I did around 8 on each sheet.
- Either dip your fingertips in water or use a small piece of parchment paper to press each cookie down to about 1/4 inch thick, making sure to press evenly.
- Bake the 1st pan for 10-15 minutes. Ovens can greatly vary, but you are looking for them to puff up and starting to get golden edges.
- Remove from the oven and cool on the pan just 5 minutes. Transfer them to a cooling rack and cool completely. As they cool they will crisp up.

I have been wanting to make monster cookies and here comes Brandi granting my dreams come true! My 11 year old made them with minimal help. These were so easy to make and turned out so well. We did use JIF because we didn’t have almond butter. They’re somehow even better the next day.
