Fruity Filled Apple Milk Popsicles

These Fruity Filled Apple Milk Popsicles refined sugar-free popsicle made with coconut milk, apple juice and fresh strawberries and kiwi! Perfect for summer and great for kids as they are dairy-free and healthy!

Summa, summa, summa-time. How on earth did it already get here? I swear it feels like I just took down my Christmas tree. Speaking of Christmas trees, my daughter (who is 2 1/2 years old) keeps asking me “Is it Christmas time yet?” I don’t know what started or brought this on…but I have to keep dodging the question, because she gets upset when I tell her “not yet”. Ahhh, kids are so funny and cute.

Well, these sure brighten her mood rather quickly and they are healthy to boot. With just 6 ingredients and fresh fruit instead of buckets of sugar, they are way more delicious and nutritious for the little ones. They are also super fun to look at.

It’s already quite warm here in Texas, which means perfect popsicle weather. Ice cream is always a favorite, but sometimes you just want something with a lot less calories and lighter….especially if you are swimming and don’t want to feel too full. These popsicles will satisfy your sweet tooth without making you feel guilty. These are filled with tons of yummy, healthy fruits and are surrounded by a concoction of apple juice and coconut milk.

The apple juice keeps it light, so the fruit can shine through and not feel too heavy from using all coconut milk. If you wanted to use all apple juice, that would work too. Obviously, that will make them more icy and less creamy.

Fruity Filled Apple Milk Popsicles

These Fruity Filled Apple Milk Popsicles refined sugar-free popsicle made with coconut milk, apple juice and fresh strawberries and kiwi! Perfect for summer and great for kids as they are dairy-free and healthy!

Yields 6 popsicles

Ingredients

  • 1/2 cup unsweetened apple juice
  • 1 cup full-fat canned coconut milk
  • 2 teaspoons pure maple syrup add more if you want them really sweet
  • 1/2 teaspoon vanilla
  • 2 kiwis chopped into 1/4 inch pieces
  • 4-6 strawberries chopped into 1/4 inch pieces

Note

  • These are nice and light popsicles with a milld creamy texture from the coconut milk. For a richer popsicle use full fat coconut milk. For a really light popsicle, use all apple juice. These make about 6 rocket-style popsicles, so double or triple for a large gathering or party.

Instructions
 

  • Shake the can of coconut milk really well first and add to a bowl with the apple juice, syrup and vanilla. Whisk to combine well.
  • Chop the fruit.
  • Stack up the fruit into popsicle molds, alternating between the kiwi and strawberries. Depending on the size of your popsicle molds, it may vary how many you get. I got 6 popsicles with the style I used.
  • Pour the prepared apple milk over the fruit, leaving 1/2 inch gap at the top to prevent overflowing. Put the lids on and place to freeze for several hours in the freezer. When ready to eat, take them out just a few minutes before so they can loosen a little to pull them from the base.

    Out of the mouths of babes, eh? I’ll bet the questions stop coming when these little pops come out of the freezer! Love the bright colors and the healthy creamy ingredients. I might have to make some popsicles/creamsicles for my kids.. who are no longer kids but grown ups:D

    Oh my goodness, these look amazing! For some bizarre reason my kids don’t like chunky fruit pops (?!) though I do, however, I could easily blitz this recipe up for a smoother version for them. Thanks for another great and healthy recipe!

      Oh, yes these could totally be a yummy smoothie I bet! I actually blend up strawberries, blueberries, lemon juice, kale and greens with vanilla protein powder every morning for my daughter and she loves it. Thank you! 🙂

    I don’t know what I love more, the amazing ingredients inside of these…or the SHAPE!! HOW FUN! I am ready for Christmas too….too soon?? HA. To be fair though I am always ready for Christmas, but I am not ready for winter.

    I feel the same way!! How did June get here so fast!! Well, summer is here and we are so thrilled!!! and it’s homemade popsicle and ice cream season! love these fruity pops! and love the rocket ship shape!! my kids would love this! Where’d you get the mold?

      Thanks Alice! Oh gosh, I think I got them at my local grocery store (HEB) for like a $1 on clearance, haha!
